Where the real savings are

The shop isn't gouging on most parts. Nearly everything is at or within a buck of MSRP. The money is in three places:

Everything else (frame, bar, stem, dropper, pedals, saddle, grips, tires) is basically MSRP. The shop's margin is the groupset and labor.

Is DIY practical?

Yes, with caveats. Di2 electronic setup requires the Shimano E-Tube app and a brake bleed kit for the hydraulics. Not hard, but not a 20-minute job either. The $708 savings buys you a few hours of build time and the tradeoff of no warranty on assembly.

Sourcing strategy

Most parts consolidate into 2-3 orders with free shipping: Universal Cycles or Jenson USA for wheels/tires/accessories, OneUp direct for dropper, Sklar direct for frame and bar.
